Brownie

When in doubt, choose chocolate. This advice might not be perfect for every situation, but it fits many. Chocolate offers a delightful sensory experience through its taste, aroma and texture. Additionally, it contains natural plant compounds that boost serotonin, our “feel-good” neurotransmitter. One thing is certain — these raw brownies will not disappoint!

Ingredients

1/2 cup almond butter

1/3 cup date paste link in directions

1/4 cup plant-based milk unsweetened

1/2 cup cacao or cocoa powder fair or direct trade

Two Tbsps flax meal freshly ground

Two Tbsps hemp seeds

1/4 cup oat flour

One tsp vanilla extract

1/8 tsp salt (optional)

Caramel Topping

Eight pitted dates

One tsp vanilla extract preferably alcohol-free

Salt (optional) to taste

Hot water

Directions

  1. Make the brownies: Line a loaf pan with parchment paper and set aside.
  2. Make the date paste if you don’t already have some on hand.
  3. Add all of the brownie ingredients to a food processor or blender and blend until smooth.
  4. Transfer the brownie batter to the loaf pan and freeze for 30 minutes.
  5. Make the caramel sauce: Soak the dates in hot water for 10 minutes (enough hot water to cover the dates).
  6. Drain, but reserve the soaking water.
  7. Add the dates, vanilla, salt, and 1.2 cup of the soaking water to the food processor and blend until smooth.
  8. If the mixture is too thick, add more of the soaking water to achieve the desired consistency.
  9. Remove the brownies from the freezer and spread the caramel sauce on top.
  10. Freeze for an additional 15 minutes.
  11. Remove the brownies from the freezer and cut into 2×2 inch squares. Store in the freezer or refrigerator.

Chef Notes

Use peanut butter in place of almond butter.

Use whole wheat pastry flour in place of oat flour.

Use almond meal in place of oat flour.

Prep Ahead

Make the caramel sauce ahead of time and store in an airtight container in the refrigerator for up to 5 days.
